This flavour bomb is a great way to end a meal or the perfect accompaniment with tea. The rich almond flavour is balanced perfectly with the citrusy orange, making it a hot seller at Bombay Coffee House.
2 large oranges
1 1/4 cup caster sugar
1 cup flour
1 tsp baking powder
1/2 cup icing sugar
1/2 cup almond powder
1 cup almond flakes
Squeeze the juice out of the orange and grate the zest and keep both aside.
In a sauce pan, add the the orange juice and 1 tbsp sugar. Reduce the orange juice to a thicker consistency and then keep aside until it cools down till the room temperature.
Whisk the egg and the remaining sugar in another bowl until you have a creamy texture.
Fold the orange zest, flour, almond powder and baking powder into the egg mixture.
Let it rest. Pre-heat the oven at 170 degrees. Pour the mixture in a grease proof tray, sprinkle almond flakes on top and bake for 30 minutes. Once baked, cool the cake on a rack, and pour the orange juice evenly on it.
